Palacinky


Slovak/Polish slant on crepes with Aunt Ruby's southern yum-yum filling as a kicker.

Ingredients
1 c flour 
1 c milk
1 egg
1 t vanilla
1 T sugar
2 T melted butter
¼ t salt
Preparation
Mix eggs with milk. 
Add salt,butter, sugar, vanilla and flour, mix until smooth.
Add extra milk to make the batter runny - this ain't for pancakes.
Heat and pam griddle or 6-7 inch fry pan.
Pour batter into pan about ½ full in center,
tilting pan so batter spreads quickly over bottom to edges. 
Heat until batter is dry, spray top with pam, and flip to cook the other side.
Plate the palacinky,  optionally spread with Aunt Ruby's yum-yum filling, add fresh fruit (berries are great) or lekvar, and roll up.
Optionally sprinkle powdered sugar.
