Jambalaya


A slight variation on John Besh's recipe. Great results with little effort. Serves 10-12.

Ingredients
½ pound bacon, diced
1 onion, diced
½ bell pepper, diced
1 stalk celery, diced
1 pound turkey kielbasi, sliced
3 C uncooked long grain white rice (we use Carolina rice)
1 T cajun seasoning (or paprika, thyme, red pepper flakes)
5 C chicken broth
1 C tomato sauce
2 pounds shrimp, shelled and deveined
3 green onions, chopped
hot sauce
Preparation
in a large heavy-bottomed pot, cook the bacon over medium-high
heat until the fat is rendered, about 3 minutes

add the onions and cook, stirring often, until browned

add the bell pepper and celery, and cook, stirring, for another 3 minutes

add the kielbasi, rice, cajun seasoning, broth, tomato sauce, green onions,
stir well and bring to a boil

reduce heat to simmer, add shrimp, stir and cover for 18 minutes

serve with hot sauce
