Shrimp and Grits

This is mostly from the Palmetto Farms stone ground grits bag (a gift from Alice in Ocean Isle Beach NC). The sous chef forgot the cheese the first time and it was still fabulous.
2 C chicken broth
2 C milk
¼ t salt
1 C grits
1 C grated cheddar cheese (optional)

6 slices thick cut bacon diced
1 small onion thinly sliced
2 t hot sauce
2 lb jumbo shrimp peeled deveined
bring broth and milk to a boil
stir in grits and salt, return to boil
cover and reduce heat to low
cook 20-25 minutes, stirring occasionally
stir in cheese and keep warm

cook bacon in skillet til crisp
remove bacon and all but 2 T grease
add onions and sauté til almost caramelized
add shrimp and sauté til pink
add bacon, hot sauce, and salt and pepper to taste
serve over warm grits
