Mashed Sweet Potatoes


This is one of our Thanksgiving sides, just enough sweet with a bit of tang.

Ingredients
5 lb sweet potatoes
4 T maple syrup
2/3 C milk
1/2 C butter melted
2 pinch cayenne
2 pinch nutmeg
chopped pecans for garnish
Preparation
 potatoes 
pierce potatoes and place on paper towels in microwave
microwave on high until they are soft
cut in half lengthwise and spoon out of skins into a bowl

 casserole 
mix in remaining ingredients except pecans
spoon into casserole
roast the pecans in a saute pan with a bit of pam
go to gram's with the casserole and pecans
nuke at high until hot and top with pecans
