Southern Greens


From Aunt Mary's Cafe, Oakland CA.  One ingredient is the answer to this question from Zed: What does the last mole down a mole hole see?  Bonus: what common sauté ingredient is omitted in this recipe?

Ingredients
¼ c onion diced
4 cloves garlic minced
2 T cider vinegar
2 bunches collard greens, deveined, 1" squares
1 bunch mustard greens, deveined, 1" squares (optional)
1 T molasses
1 T worcestershire sauce
2 dashes hot sauce
salt
pepper
Preparation
in large pot medium heat cook the onions, garlic and vinegar until liquid reduces by half

add the greens, molasses, worcestershire, hot sauce, 1 c water, and freshly ground salt and pepper, cover with parchment paper and simmer about 30 minutes til greens are tender

serve with hot sauce on the side
